I avoid any temptation to dive into traditional gluten-filled stuffing by bringing this gluten-free, grain-free version to every holiday gathering. Packed with vegetables, healthy fats and protein, this gluten-free, grain-free stuffing will leaves me feeling full and satisfied and prevents me from overindulging at my holiday meal.

Ingredients
- – 1 tablespoon coconut oil
- – 3 cups onion
- – 2 cups celery
- – 1 cup mushrooms
- – 1 cup apple
- – ¼ cup chopped dates
- – ¼ cup chopped parsley
- – 4 teaspoons poultry seasoning
- – 3 eggs
- – 2 cups almond flour
- – Salt and pepper to taste
Directions
Preheat oven to 350ºF. Heat coconut oil in a large pan over medium heat. Add onion, celery, mushrooms, apple, dates, parsley, poultry seasoning, salt and pepper. Sauté until very soft, about 7 minutes. Remove from heat.
In a mixing bowl, whisk eggs and slowly stir in almond flour until well mixed. Transfer egg and almond flour mixture to pan with sautéed ingredients and stir until evenly combined. Transfer stuffing to a 9” x 9” baking pan.
Bake for 45 minutes to 1 hour, or until browned on top.
