Super Simple Zucchini Lasagna

This dish requires only four ingredients, takes just minutes to toss together and is so delicious, it’s a crowd-pleasing meal for the entire family. To keep this Super Simple Zucchini Lasagna the healthiest it can be, I always use both grass-fed ground beef and grass-fed goat cheese. When meat and dairy products are grass-fed, they contain a healthy ratio of omega-3 to omega-6 fatty acids. Using this magical tool helps keep this recipe super simple. It cuts your zucchini into long, even strips and takes much less time than trying to do it yourself with a knife. Hint: Place your mandoline perpendicular to your body, pushing the handguard away from your body for easy slicing.

After you have cut your zucchini into strips, you only have a couple more steps until you have a delicious meal sitting on your table! Just cook the ground beef to your liking, add tomato sauce and layer the zucchini, meat sauce and goat cheese until the dish is full. Bake for 20 minutes and it’s ready to serve! Super Simple Zucchini Lasagna

Ingredients:

1 pound ground beef

6 oz. crumbled goat cheese

24-oz. jar tomato sauce

4 large zucchinis

Directions:

Preheat oven to 350 degrees. Using a mandoline slicer, slice zucchini lengthwise into long, thin strips. Over the stove, cook the ground beef until lightly browned. Once cooked, add the entire jar of tomato sauce and stir until well combined. In a 9” x 13” baking dish, place a layer of zucchini, then a layer of meat sauce, then a layer of goat cheese. Repeat this pattern until the dish is full. Bake for 20 minutes.
