Healthy Baked Chicken Tenders + Greek Yogurt Ranch Dressing

Who doesn’t love good old fashioned fried chicken tenders smothered in ranch dressing? I don’t know about you, but it’s one of my guilty pleasures I just cannot resist. And having picky eating children who also cannot resist chicken tenders, I found my family eating them way more than we should.

That’s why I finally decided to experiment and come up with a healthy version to ensure my family isn’t consuming poor-quality meat that is fried in extremely unhealthy oils. My healthy baked chicken tenders with Greek yogurt ranch dressing recipe actually provides my family with real whole food nourishment.  

When I make them myself, I can ensure my chicken is organic and pasture-raised and the rest of the ingredients are also healthy and organic. And to be honest, my family doesn’t even notice the difference! Try out my recipe and I’m sure it will become a weeknight staple in your house!

Ingredients:

Healthy Baked Chicken Tenders

  • – 1 package of organic, pasture-raised chicken tenders
  • – 1 organic pasture-raised egg
  • – 2 tbsp. almond milk
  • – 1 cup almond flour (or almond meal)
  • – 2 tsp. garlic powder
  • – 1 tbsp. parsley
  • – 1 tsp. Himalayan salt
  • – Pepper to taste

Greek Yogurt Ranch Dressing

  • – 1 cup unsweetened Greek yogurt
  • – 1 tbsp. fresh dill
  • – 1 tsp. garlic powder
  • – 1 tsp. onion powder
  • – ½ tsp. salt

Preheat oven to 425°F. In a bowl, whisk together egg and almond milk. In a separate bowl, mix the almond flour, garlic powder, parsley, salt and pepper. Dip each chicken tender piece into the egg mixture and coat both sides, then dip it into the flour mixture and coat both sides. Place coated tenders on a baking sheet and bake for 25 to 30 minutes or until thoroughly cooked.

While the tenders are in the oven, place all dressing ingredients in a small mixing bowl. Mix all ingredients together until thoroughly combined.
